Pesto
Makes 300ml/½ pint
Ingredients
25g/1oz fresh basil leaves 2 tablespoons of pine nuts 2 garlic cloves, finely chopped 200ml/7fl oz extra virgin oil 25g/1oz grated parmesan cheese 75g/3oz pecorino cheese Ground black pepper |
Method
Place all the ingredients except the olive oil in a food processor and whiz into a paste and then slowly add the oil. If you don’t have a food processor you need to grind them in a mortar and pestle. |
